Since its transformation in 2018 under the ownership of Claire Clarke, Andy Hopp, and Basalt local Chef Matt Leblanc, it is a beloved destination for both locals and visitors.

The Tipsy Trout’s ambiance blends cozy mountain-town aesthetics and with indoor and outdoor seating options. Inside, a tin ceiling, timber supports, and glass garage doors connect the indoor dining area and the spacious outdoor deck, allowing patrons to enjoy river views easily showing why this deck was voted as “Best Patio” by locals five years in a row. Perfect for lunch before an afternoon on the river or a welcome respite from biking on the Rio Grande Trail, the filling and still light Fish Tacos are delicious.

Filled with grilled cod, cabbage slaw, a chipotle aioli, and tomatoes served with a side of guacamole, and black beans, each bite is enhanced by a healthy squeeze of lime. For dinner, the Tipsy Trout continues to impress with a diverse menu. One of Chef Matt LeBlanc’s signature dishes is the Rocky Mountain Trout. This beautifully prepared dish features trout generously stuffed with lemon and butter, delivering a perfect balance of citrusy brightness to balance the richness of the butter.

Served on a bed of roasted potatoes and green beans providing an earthy base for the dish. (The potatoes are the perfect lemon-butter delivery device!) Topping it off are slivers of almonds that add a delightful crunch and enhance the overall texture. The margarita is a local favorite that pairs perfectly with the Fried Chicken Sandwich, another standout on the menu.

The sandwich features buttermilk fried chicken that is tender, juicy, and crispy. The red onion gives a punch of flavor with the sweetness of the tomato and smooth chipotle aioli.
